DESCRIPTION


Intense fruity, herbaceous green, with a lovely scent of fresh grass, traits of tomato leaves, pleasant fragrance of artichoke heart. Marked sense of olive’s bitterness and a nice spicy ending. Its fruitiness is  extremely neat.

USE


VEGA is a great extra virgin olive oil, with intense olfactory senses and an average gustatory persistence. It can give unforgettable senses on warm dishes of any kind of complexity. It leaves very pleasant marks on Italian traditional entreès such as baked pasta and red sauce fusilli. It combines perfectly with international style spicy soups and on with grilled fish.

IDRA

DESCRIPTION


Mildly fruity, herbaceous green, with neat senses of green tomatoes, mown grass and light notes of fresh almonds. Its bitterness is light and pleasant and its ending is long but delicate and spicy. Extremely visual clarity and fluidity.

USE


The peculiarity of its marked olfactory scent in combination with its extreme delicacy makes the IDRA extra virgin olive oil suitable for preparing and garnishing little or moderately complex dishes. In particular it can be used to elevate fish, eggs or boiled meat based dishes and in the making of traditional basil pesto and other sauces.

SPECIAL FEATURES


It gives to every dish an overall sense of green herbs, both olfactive and postnasal, without interfering with the characteristics of the food.
